Puerto Rican Snack: Bacalaítos (Codfish Fritters)

So, as you can tell from the photo, bacalaítos are totally fried, but totally good. They are cod pancake-like fritters that are amazingly delishes. If you're into seafood and fried stuff, this is a treat you'll love. Bacalaítos are from Puerto Rico and they are eaten as a snack. But hey, if you want to have it for dinner with side of white rice and red beans -- you're totally allowed!

What You'll Need:

1/4 lb. bacalao (cod fish)

3/4 cup flour

1/2 tsp. baking powder

1/3 tsp. salt

3/4 cup water

1 garlic clove

2 cilantro leaves

1 envelope sazón seasoning

Vegetable oil

How To Make It:

1) Cut the codfish in chunks, place in a pot, cover with water and boil on high for 15 minutes.

Drain, debone, wash and shred.

2) In a bowl, combine flour, salt, and baking powder.Make a little well in the center. Pour the water slowly and mix to make a thick like sauce (sort of like a pancake batter). Add the sazón and stir well. In a mortar, crush the garlic and cilantro leaves. Add to the mix.

3) Add the shredded codfish and mix well.

4) In a frying pan, preheat a lot of vegetable oil. Fry the bacalaitos on high heat. Turn as needed.

Bacalaitos are done when they are golden. Drain in paper towels and let them cool before biting into them.
