Ooooh this soup is good. It's made chilled and you can make it with various fruits and vegetables. It's tomato based, but you can always change it up (you're the cook, remember!)
This is perfect for warm weather when you want something refreshing and cool. The temperatures haven't quite dipped yet (it's only autumn!) Either way, it's soooooo good. Gazpacho is a classic soup from Spain.
The soup isn't actually cooked at all, but rather the ingredients are blended together and served cold. Don't forget to have this soup with a side of bread! :-)

What You'll Need:
8 cups of watermelon (chopped & seedless)
1 medium cucumber (peeled, seeded, & chopped)
1/2 bell pepper (diced)
1/4 cup chopped fresh basil
1/4 cup chopped flat-leaf parsley
3 tablespoons red-wine vinegar
2 tablespoons minced shallot
2 tablespoons extra-virgin olive oil
3/4 teaspoon salt
How To Make It:
1) Mix all of your ingredients into a large bowl.
2) Puree 3 cups of the mixture at a time into a blender/food processor.
3) Transfer pureed mixture into another bowl. Enjoy!
