Mashed potatoes: comfort food at its finest.
This is a delicious recipe that I made for dinner the other night with a baked chicken, and I highly recommend it. The potatoes were fluffy, creamy, and flavorful. Fresh herbs? The best part.
(If you don't have a slow cooker, you can also make them by simply baking the potatoes in a conventional oven, rather than setting-and-forgetting them for a few hours.)
1. Place 4 lbs of cubed red potatoes (about 1 1/2 in. pieces) in a greased 6-7 quart slow cooker. Add 1/2 cup water, 1 tsp salt, 1/2 tsp pepper, 4 cloves minced garlic, and 1/4 cup of melted butter. Toss to coat evenly.
2. Cook for 4 to 4 1/2 hours, until potatoes are tender when pierced with fork. Do not drain. Then, mash potatoes with a potato masher.
3. Warm 1/2 cup cream in the microwave. Add this, along with 2/3 cup sour cream. Beat with an electric hand mixer until desired consistency is reached. Add milk if necessary.
4. Serve warm with butter and minced chives. Enjoy!

2/3 cup sour cream
1/2 cup cream, warmed in the microwave
1/2 cup milk, warmed in the microwave, or as desired
