Kinda Vegetarian, Totally Latina: Week 4 Update

Has it really been a month since I've been vegetarian? Holy guacamole!

HAPPY MONTHIVERSARY TO ME!

I can't even tell you how easy this month has been. Of course I struggle a bit here-and-there, but this overall experience has been far easier than I thought it would. I am also at an advantage because I've always loved plant-based foods, I am not a picky eater, and I love cooking.

Where I am getting my protein sources?

Primarily from egg whites and whole eggs. I am also eating various processed veggie products to get my protein like veggie burgers, hot dogs, and meatless crumbles.

What have I changed in my diet?

Since I am trying to get stronger, I have increased my carbs and calories. I realized that since changing my diet, I wasn't eating nearly enough. I think sometimes we forget that if we're eating mostly a plant-based diet, those foods are usually low in calories. And we might not getting enough of those calories to help meet certain goals (or to even function properly as a human being).

Anyway, I feel MUCH better. Before I was feeling very sluggish, tired, and just "out of it." Low calories and restricting my carbs was the problem. But no worries, diet has been adjusted! And I feel like I have so much energy, I am more productive, and I feel stronger. My performance at the gym has definitely improved.

I GET TO EAT SO MUCH MORE FOODS AND THIS MAKES ME SO EXCITED!

Here's What I've Eaten This Week:

This is how a lot of meals look like right now. I eat a cup of egg whites for breakfast, and also for dinner if I need to catch up on my protein.

TRYING TO GET STROONGG! NEED FOODZ!

This is a sausage veggie skillet with potatoes!

Even though I am vegetarian, it doesn't mean I don't still enjoy burgers! This is a veggie burger, of course!

I like cheeseburgers and cheap wine.
