Winter Panzanella with Roasted Vegetables

Normally panzanella is a summer thing; there's fresh mozzarella and the sweetest heirloom tomatoes from the farmer's market (pro tip: go at the end, when everything is on sale and then you can buy wayyyy too much produce).

But here, there's roasted fall root vegetables. The beets kind of contaminate everything, but it's such a pretty pink that I don't mind. There's creamy fresh mozzarella, juicy oranges and crunchy garlicky croutons to round it out, too. Cheesy af, but this panzanella makes eating salad fun.
