I’ve been meal prepping for myself and friends recently, a lot of them were surprised to discover that you can slow cook a salmon filet in the crockpot. I love cooking with my crockpot because I can put the food in before going to school/work and come home to enjoy a hot meal. It’s a pretty simple recipe to follow. Get a filet that will fit your slow cooker, or crock pot, line the bottom of it with lemon slices. Place your salmon filet on top of the slices after applying your favorite spice rub. Add vegetable broth till it is about halfway up the filet. Squeeze in some lemon juices and cook on low for 2 or 2 1/2 hours.
