Kimchi (김치)

There's a reason why Korean people say "Kimchi!" instead of 'Cheese!" when they take a picture. No Korean food-related collection could ever possibly be complete without kimchi. Kimchi is the foundation of the Korean diet and a meal is rarely complete without it. The reddish fermented cabbage -made with a mix of garlic, salt, chili and other spices-is served at breakfast, lunch and dinner! Traditionally served as a side dish, nowadays kimchi is used in everything from noodle dishes to pancakes and condiments (kimchi mayonnaise anyone?) and even as a topping for burgers and pizzas! Kimchi is remarkably good for you and frequently ranks as one of the world's healthiest foods. Not only is it low in calories and loaded with vitamins A,B and C but it's also full of healthy bacteria which aids digestion and has been linked to lower rates of obesity! What's not to love? There are many different types of kimchi depending on what vegetable it is made from; examples include radish, cabbage and cucumber. Kimchi is always served with meals in Korean restaurants but if you find yourself with a kimchi craving - don't worry - it is stocked in all Korean supermarkets!
