Quick and Easy-Vegetable Rotini

My husband is a nurse, so his schedule is unconventional. That means however that we get to have some fun when the kids are in school. Although my kids are good little hikers, there are some trails that might be a little hard for them. So, when we’re alone we can go on harder trails. Today we found a hike. It ended up being 4.6 miles, with lots of big rocks to step up. At the end, we found this amazing waterfall!

I know I already posted a dinner idea today, but I wanted to share this one before I forget. There are always no leftovers when we make it.


§ Cooked Chicken

§ Cooked Rotini (We used Barilla Piccolini, 3X the fiber! Great product for kids who don’t like the grittiness of 100% whole grain pasta)

In a 1.5 quart casserole dish, put in:

§ 1 chopped onion

§ 1 chopped green bell pepper

§ 1 chopped red bell pepper

§ 2 chopped carrots

§ 3 TBL butter

Microwave on high for 5 minutes. Remove from microwave and add to the top of the veggies:

§ 2 TBL flour

§ 1 cup chicken broth

§ salt

§ pepper

Microwave again for 6 minutes. Pour saucy veggies onto cooked noodles. Add chicken to dish. Sprinkle with Parmesan cheese and more salt.
