Steamed Cassava Coconut Cake

When it comes to cooking I'm all about simplicity so this is a quick and easy dessert that's quite popular in the Lao/Thai community which is actually called Kanom Muntone but I'm sure those living in the South East Asia are probably familiar with this dessert too. Ingredients: - 2 pk frozen cassava - 2 cups of sugar - 1 can of coconut milk - 1 pk frozen shredded coconut - 1 tsp of salt Directions: 1. In a mixing bowl combine all ingredients and stir it thoroughly. 2. Get a non stick square pan and pour the batter into the pan. Pouring it half way making sure to leave room for it to expand as it cooks. 3. Place the trays into a steamer cooking it on medium heat for 25 to 30 minutes. 4. The cassava is cooked once it solidifies and has a jelly like appearance. Once thoroughly cook remove from heat and let cool. Cut into diamond shape or to your preference and toss together with the shredded coconut. 5.
