Amaretto Strawberry Parfait with Soy Vanilla Yogurt - Only 55 Calories!

I love dessert recipes that are so healthy that you can cheat and make it a snack for any time of day without feeling like you're really cheating. Case in point, any type of dessert using strawberries has always been my go-to when I want to eat something that satisfies my sweet tooth. Paired with almond liqueur, you've got a delicious parfait with grown-up appeal. (You can also serve these strawberries over soy ice cream for a completely different treat!) ------------------------------------------- Amaretto Strawberry Parfait with Soy Vanilla Yogurt 1 pint fresh strawberries, hulled and sliced 3 tablespoons amaretto (almond liqueur) 4 cups soy vanilla yogurt (I use Whole Soy & Co. Organic brand.) 1. Combine the strawberries with the amaretto in a serving container and stir together. Crush about 1/4 of the strawberries with a fork, and mix again until you have crushed all the strawberries. 2. Let the mixture stand for about 30 minutes before serving. If you are planning to let it stand any longer than that, cover and refrigerate. Serve layered with the soy yogurt. Makes 4 parfaits!
