Loubieh Siami, Lebanese-Style Green Beans with Crushed Tomatoes (Vegan)

Loubieh Siami is perhaps one of the Middle East's most popular vegetable sides behind their wide assortment of incredible salads. I was never a big fan of green beans when I was a little kid, but when my mother would simmer her green beans in crushed tomato in the fashion of this recipe, it really got me liking them. If you're having a 'meatless day', this is a completely satisfying side to some saffron rice and labneh. And if you're wanting to pair this with a meat side, this goes incredibly with roasted lamb! --------------------------------------------- Loubieh Siami (Green Beans) 1 1/2 lbs. green beans or green black eye peas 1 large onion, chopped 1/3 cup oil 1 cup water 5 ripe tomatoes, finely chopped, or one 28-ounce can whole tomatoes, chopped 1 teaspoon salt 1/2 teaspoon allspice and pepper 1/2 teaspoon cumin (optional) 1. Wash green beans and cut each in half. Fry onion in hot oil until tender. Add the green beans and saute for 10 minutes. 2. Add chopped tomatoes with their juice and water. Sprinkle with salt and spices. Cook on medium heat for 25 minutes or until tender. Serve hot.
