Blackened Chicken Burgers with Warm Mango Salsa

For the Patty

1 pound ground chicken breast

¼ cup red bell pepper, diced

½ medium onion, grated

1 garlic clove, grated

¼ cup green onion, chopped

⅛ cup jalapeño, minced

1 teaspoon salt

4 teaspoons blackening seasoning , divided

1 tablespoon olive oil

4 whole-wheat buns

Mango Salsa

1 teaspoon olive oil

2 cups frozen mango chunks, thawed

¼ onion, chopped

1 garlic clove, grated

1 tablespoon jalapeño, minced (or more if you want more spice)

1 teaspoon apple cider vinegar

1 teaspoon jalapeño

1 tablespoon cilantro, chopped

pinch of salt

1 teaspoon lemon juice


For the patty, combine all the ingredients in a bowl (except the last three) and form four patties. Sprinkle each patty (top and bottom) with blackening season. Heat a large non-stick skillet over a medium-high heat. Add olive oil. Cook patties until done (about 5 mins per side) Do not overcook.

For mango sauce, combine all the ingredients (except lemon juice) in a small sauce pan. Cook in medium heat and let it simmer for 5-8 mins. Then add the remaining jalapeno, cilantro, pinch of salt, and juice of lemon.

Assemble and enjoy!
