Happy National Tequila Day!Tequila Lollipops
Here's my take on this fabulous invented holiday, which I already celebrated last night with a Mango Margarita, and plan on celebrating again tonight with a shot of Patrón (okay, fine, a couple shots of Patrón).
What could be better than a heaping plate of freshly cut watermelon? Nothing, you say?
THINK AGAIN: juicy watermelon wedges soaked in a mixture of tequila, Triple Sec, and simple syrup, then sprinkled with sea salt. HEAVEN.
And best of all, it's incredibly easy to make at home.
Tequila-Soaked Watermelon Wedges

All you need is...
1 seedless watermelon
1 cup sugar
3/4 cup water
1/2 cup tequila
1/4 cup Triple Sec
2 limes, halved or cut into wedges
Flaked sea salt or coarse salt
Here's what you do...
1. Quarter watermelon and cut into wedges around 1 inch thick. Arrange slices in a single layer in two 9"x13" baking dishes.
2. In a small saucepan, bring sugar, water, Triple Sec, and tequila to a boil. Cook, stirring, until sugar dissolves (about 1 minute). Let cool slightly.
3. Pour syrup over watermelon wedges and refrigerate for at least 45 minutes.
4. Remove watermelon from syrup and arrange on a platter. Squeeze limes over melon, and season with salt.
